EASTER SUNDAY



It would have been a beautiful morning for an Easter Sunrise Service on the beach.  Unfortunately, we overslept.  That is an easy thing to do when you are on vacation.  Too bad as it was a walk across the street.  It doesn't help that we are now 2 hours behind with a time change plus daylight savings time.  We have been lucky if we wake up by 9AM, (7AM TN time).  We did the next best thing though and watched our home church Easter service.  Dave streamed it through my nook into the TV.  

We invited George and Kathy to join us for Easter dinner.  It just seemed appropriate to celebrate this special day with our new friends.  We are missing our family today and wanted to spend the day with someone special and not by ourselves.  Kathy told had mentioned an easy recipe for BBQ that I would like to share.  I made my "famous" potato salad, coleslaw and Impossible pie.  I make the potato salad off the top of my head, so can not share a recipe for it.  But, since we are not using white sugar, I found this great recipe for Coleslaw that uses maple syrup.  It was delicious!  Plus, I have been craving coconut pie.  I brought my cookbook with me with family recipes.  I remembered one that would be great for camping.  It's called Impossible Pie.  It's an old Tupperware recipe from the 70s.  It's very close to a custard pie and makes it's own crust.  Our meal was delicious and am sharing the recipes with you as follows:   

Coleslaw with Maple Syrup

  • 3/4 cup mayonnaise
  • 1 tablespoon maple syrup
  • 1 tablespoon fresh lemon 
  • 2 tablespoons rice vinegar
  • Salt and freshly ground black pepper, to taste
  • 1 small head of cabbage, cut in strips or shredded (or bagged coleslaw mix)
  • 1 carrot, shredded
  • 2 tablespoons parsley
  • salt, pepper and celery salt to taste

  • DIRECTIONS
  • 1. In a serving bowl, whisk together the mayonnaise, maple syrup, lemon juice, vinegar, salt, and pepper to taste. Mix until well blended.
  • 2. Add the cabbage, carrots, seasoning and toss evenly with tongs until well coated.
  • 3. Refrigerate the slaw for at least 1 hour to let the flavors meld. (May be covered and refrigerated for up to 1 day.)
  • 4. Toss the coleslaw well before before serving. If desired, garnish the bowl with a sprinkle of parsley.

BBQ Pork Roast

1 Pork butt roast or tenderloin
1- 12 oz can root beer
Jar prepared BBQ Sauce
Salt, pepper & garlic salt to taste

Season Pork roast and place in slow cooker.  Add can of root beer.  Start on high for one hour & turn down to low for approximately 10 hours.  Meat should be tender enough & separate with a fork.  Add a little of the BBQ sauce and serve with a slotted spoon.  You can serve with buns or by itself.  Put rest of BBQ sauce out for people to add as they like.



Impossible Pie

4 Eggs                                                    3/4 cup sugar
1 stick butter (1/2 cup)                             1 tsp. vanilla
1/2 cup flour                                            1 cup shredded coconut
2 cups milk

Blend ingredients together.  Pour into 2 pie pans & bake at 350 for 1 hour.  I used turbinado "raw" sugar instead of white, so needed to melt butter & sugar together first for granules to melt.  I also cooked it in my convection microwave oven for 35 minutes.  It came out perfect!  Enjoy!

March 30, 2013 FRESHLY CAUGHT FISH DINNER!






FINALLY!  Dave caught our dinner for tonight!  :-)  He hooked two Whitings, just enough for a tasty dinner pictured above.  Neither of us has ever had Whiting before or even heard of it before this trip.  I am not a big fish lover, especially if it tastes fishy.  This fish though is so delicious!  I am surprised that it is not on the menu at most seafood restaurants.  Dave prepared the fish by dipping in egg & milk and then rolled in garlic & herbs bread crumbs.  He fried lightly in pan with a small amount of oil.  VERY GOOD!

March 29, 2013 IT'S 5:00 SOMEWHERE!

 The highlight of our day was having happy hour with Karen and Jerry by the pool.  We shared RV stories and appetizers over a couple glass of wine.  It's a tradition for a group of "snow birds" to meet up here daily at 5PM for socializing and happy hour.  There is plenty of opportunity to socialize here at the Carrabelle RV Resort, if that is what you are looking for.  We really enjoy our alone time together but once in awhile, it is a treat to spend time getting to know other people.  I keep my I-phone handy at all times to take notes on other resorts that are recommended to us.

March 28, 2013 FATHOM'S RAW BAR

OK....time to get back to our healthy eating plan.  We ended up eating "All you can pasta" last night at 2 Als.  Ugh.  It was very good and reasonably priced for $8.95 a person.  But, we were stuffed last night and still feeling sluggish this morning.  We always feel better when we eat lighter healthy foods and stay away from flour, sugar and processed foods.  So today begins our journey back into gaining control of our eating habits.  Otherwise, I will not fit into my clothes anymore.  

We spent the afternoon at the beach and then met up with George and Kathy at Fathom's Steam Room & Raw Bar in Carrabelle.  Dave and I ordered a dozen oysters - 1/2 raw & 1/2 steamed with Parmesan cheese.  They were good but only half the size as The Beach Pit in Eastpoint.  The price was $8.95 compared to $5.00 at The Beach Pit during their happy hour from 4-6PM.  

Check out their website above though for a schedule of live music.  Their band line up looks great.  This Saturday "Wakulla Rising" is playing Swamp Blues music.  I love blues and would love to go see this band.  Tonight though was Karaoke night.  Thank goodness, I didn't sing.  Although, I did enjoy a little line dancing.  Fathom's is a fun  place and the regulars there are so friendly.

March 27, 2013 A DAY AT ST GEORGE ISLAND




While having our coffee this morning, George stopping by to invite us out on his fishing boat.  We met George and Kathy while out on the beach this past Sunday.  Their home is in Green Bay, WI and are renting a beach home behind our resort. 

We left the marina by the city dock and headed out to Dog and St. George Islands.  The breeze was brisk but we still had a fabulous time with our new friends.  George's boat was custom built to his specifications.  We were surprised at how smooth the ride was considering the height of the waves in the ocean.  Even though the guys didn't catch any fish, we enjoyed sitting on the beach and taking in the gorgeous views and chatting and getting to know  each other.  

They have a gorgeous dog, Ruby - a Vizsla (Hungarian Bird Dog).  What an outstanding dog!  She enjoyed running after the seagulls and swimming in the cold water.  Ruby is a very loyal dog.  On the ride out to the marina, she kept her paw on George's side while he was driving the van.  They call her Velcro dog, because she is always attached to George somehow.   Spending the day with George, Kathy and Ruby was a very special time and am so glad that we met them.

March 26, 2013 TATE'S HELL!

2 Als on the beach!  We were looking forward to eating at this restaurant only 1/2 mile from our resort.  With many recommendations, we decide to try their cheeseburger.  Oh my!  It was the cheeseburger that we have had in a very long time.  The crinkle fries were not from scratch.  But who cares?  This cheeseburger really made up for it.  It was a great lunch, funky retro beachy atmosphere and I can't wait to come back tomorrow and try their AYCE (all you can eat) pasta.
  
After lunch, we decide to check out the famous Tate's Hell State Park.  I really wasn't that excited to go there.  I mean, it's just a big old swamp with trees. We stopped to the rangers station to get maps and further information.  He gave  us some information and suggestions.  What a delight it was!  It would have been a shame for us to miss this unique and beautiful area.  Tate's Hell State Forest is 202,437 acres in Franklin County and portion of Liberty County.  Check out the legend story on their website on why it is called Tate's Hell. It's an interesting story. 

We entered the forest on the lower southern quarter by Eastpoint from hwy 98.   I highly suggest you get a map first before venturing into this forest.  Our first stop is the dwarf cypress boardwalk.  Very cool!  These cypress trees are over 150 years old and reach of maximum height of 15 feet.  It was a beautiful view on the top deck of the boardwalk.  A stork was nestled in the wetlands area between the cypress trees. It was a unique view and have never seen anything like it before.  

We continued on through the forest along the river stopping at a few of the vacant primitive campsites.  Breath-taking!  What else can I say about these gorgeous sites over looking this wide beautiful river.  It made me (kind of) wish we still had our old Coleman pop-up camper, duck tape and all.  At least, we could easily maneuver it into this site going over the one lane bridges and all. Although, I can imagine the bugs and mosquitoes having their way with us during the warmer months. Plus, the "no see 'ems" are aggressive enough this time of the year.  This is a perfect place for kayak and canoeing.

March 25, 2013 CREATURES ON THE BEACH







Wow!  What a temperature drop from yesterday.  At least, it is sunny...not a cloud in the sky.  Dave left for an afternoon of fishing, so I can work on my blog.  I am very content to sit here at my table looking out into the resort and watching people coming and going.  Sometimes, it is good to take it slow and not be going all the time.  This is a lesson that I need to learn when I go back home.  I am enjoying the peace and quiet right now and am also very happy that Dave is enjoying a nice afternoon of fishing.  I sure hope he returns with tonight's meal or we may be going out for dinner.  :-)

I think Dave was only gone and hour and wanted me to join him for a walk on on the beach.  He wanted to try out a spot that is popular for fishing a short distance from our resort.  We parked the truck down the street and walked further down the beach.  The tide was out pretty far and the ocean bottom was exposed with rippled sand and the sand was filled with various sea items.  Weird things....not sure what any of it  is though.  It doesn't really matter.  We are still having fun discovering new things together.  What a great day for a walk on the beach!

March 24, 2013 PALMS



Everything always looks better in the morning and I have never been a quitter.
Plus, Dave encouraged me to continue.  He said "keep it simple Debbie and do it for us, like a scrapbook of our adventures."  He is right.  I cannot give up and I will continue doing it.  Maybe, I will be able to go back and recapture those missing days because of the pictures I have and maybe not.  It doesn't matter. I will continue on and be happy with anything that I can record of our travels.  It may not be every day or every situation.  I am still very grateful to God and feel incredibly blessed to be on this journey. 



Good Morning gorgeous sunny day!  FINALLY....a perfect beach day.  We love our new site at the edge of the resort.  There is a "secret" path to the beach...meandering through the trees on a pine needle path.  I stopped a moment to reflect and remember what a special day it was today, as I stepped over a palm branch on my path.  Today, is Palm Sunday.  Instead of going to church where we sometimes receive a palm leaf, we are surrounded by palms everywhere.  Yes, today is truly a beautiful day and I am so amazed at all of God's beauty around me.  

We were literally the only people on this part of the beach.  Most beach goers go to the public beach area, directly across from our resort.   The only negative with this location is that we are not close to the public restrooms.  But, we are still only a short walk back to our RV.  Besides, it seems like we are running back for food, drinks or something.  We stayed on the beach the entire day.  

Dave enjoyed a good day fishing, too.  He managed to reel in 5 catfish.  The last one was around 24".  I know that you catfish lovers are cringing right now.  In Michigan, we referred to them as suckers.  :-)  I worked for Cracker Barrel  and know how much everyone loves their catfish dinner.  It is probably a little different when it is farm raised.  We were very surprised that there are catfish in the ocean!

March 22, 2013 ALLIGATOR POINT






Alligator Point is our destination.  We have hopes of finding seashells on the beach and bringing home bags of shells to our grandchildren.  We enjoyed the beautiful drive down scenic hwy 98 around the bay to this beautiful peninsula.  We took a great walk down the beach but came home empty-handed in the shell category.  Still...it was a nice day and nothing to complain about on this wonderful vacation.  :-)

March 21, 2013 APPALACHICOLA

What a gorgeous day to take a drive to the town of Apalachicola. We feel so young and free listening loudly to 70s music on XM radio.  And I'm not talking about the disco stuff in the late 70s.  I'm talking about the Eagles!  :-)  There is something about listening to the Eagles that takes me back a few years.  I'm remembering listening to them in our 1974 Chevy Van, with Dave driving with our Irish Setter, King beside us.  Those were the days but these days sure look like they might even be better!  :-)

With the bay on our left, we cross over a large bridge into the historic town of Apalachicola.  If you want to enjoy a coastal town, this is  own to visit. It's full of quaint little shops and loaded with history.  I wish we were in town in May when they have their historical home tour.  We passed up having dinner at Boss Oysters this time and opted for Papa Joes instead.  We had a great seafood meal at Boss Oysters last time we visited and loved their T-shirts with pictures of oysters and"Shut up and Shuck" on the back.

Papa Joes is a little ways from town on the water.  The views were pretty and we were hoping to see an alligator swim by.  I ordered the fried oyster plate and Dave had a burger.   When you first walk in, it is very dark and has a large bar. They seated us on the back screened porch area.   It was a perfect place to eat after a day of shopping in Apalachicola.  The food was good, too!

March 19, 2013 RV ADVANTAGES

Another thing that I am really enjoying about this RV lifestyle is all the fellow RV travelers that we meet.  There are the "Snow Birds" - folks who travel from the north and head south for the winter.  Then there are (my envy) the "full-timers" who live on the road all the time.  The rest of us...well, we just want to get away when we can and not have to stay in a hotel.  

There are so many advantages to owning an RV.  After the initial expense of purchasing your RV, a night's stay is much less than a hotel.  Plus, you have your own bed and conveniences much like home.  You are literally 3 or 4 steps out the door and can quickly and easily spend time sitting outside.  Many people set up special outdoor areas to enjoy while at their destination.  

The above reasons are why we decided this traveling lifestyle. Plus, we wanted to be able to travel with our precious Shih tzu - our girly girl, Charlotte.  Unfortunately, she passed away in December - a month before we bought our RV.  We miss her so much and know that she would have loved our new fifth wheel.  She was such a good dog 

and loved to travel.  I take comfort in petting every one's precious pups.  Most folks who camp have pets and is another reason why this is a great way to travel.

March 17, 2013 CORN BEEF & CABBAGE




What?  No sunshine?  What a dreary rainy day. It poured all day.  It was a great day to make a brunch which I call "slumgullion". This name was first coined by my mom when we would go camping.  She would put noodles, corn beef, soup and corn in a pan and cook it all up.  Try to make this dish at home and it just isn't the same. You have to make it while camping.  My brunch concoction was a mixture of eggs, corn, ham, potatoes and onions all fried in a pan with a little oil.  Dave cooks it all outside which is even better.  This was the first time since arriving to Carrabelle that we enjoyed a meal outside.  As soon as we finished, the heavy rain and gray clouds arrived.  

This has been a great day for Dave to take a nap and for me to get going on this blog.  I'm finally able to blog daily.  It seems like boring stuff as I write this. But I know that I will really appreciate coming back and reading this someday.  

Since it is Saint Patrick's Day, we signed up to go to the 3rd Annual Corn Beef and Cabbage Dinner.  Boy....and we are so glad we did.  The food was so delicious.  The corn beef was so tender and found out that they bake it all day in the oven. It's more tender than boiling it, like I usually prepare it.  We enjoyed it so much that we will make sure and sign up before we arrive again next year.

March 16, 2013 EASTPOINT FIRE DEPARTMENT RIBFEST









Ribs for breakfast anyone?  That is exactly what we had for our late breakfast, as we headed to the Eastpoint Fire Department's annual Ribfest.  YUMMY!  The ribs were great and it went to a very good cause.  They also had a silent auction, music and vendors selling items.  It was a nice way to start our Saturday.

Since it was nice and sunny, we decided to head to the beach.  The sun was great but cool winds, not so much.  We ended up spending the afternoon by the resort's pool.  Hmm...still not a bad way to spend a Saturday afternoon.

March 15, 2013 CARRABELLE HISTORIC MUSEUM

The Beach Trader is walking distance from our RV Resort.  What a cute little place!  It reminds me of the souvenir stores in MI that were in old shabby buildings but still loaded with character and charming gifts.  Pam, the owner greeted us and told us her story on how she moved to Carrabelle.  What a delight she was and her little store.  I bought shell to put on a necklace chain and shell earrings.  They are probably made in China, instead of from the ocean but the price was right and wanted to give Pam some business.  

We also made it out to the Carrabelle Historic Museum.  A little elderly lady showed us around and told us of the history of Carrabelle.  A stop for ice cream across the street made this a perfect afternoon.  

It may seem at first that there isn't a lot to do in this quaint beach area.  It isn't full of the high rises and shopping that you would see in tourist destinations like Destin and Orange Beach.  All the better!  We love it here!  We'll wait to enter the rat race and shopping when we get back home.

March 14, 2013 BALD POINT STATE PARK





Today is a sunny but cool day and a great day for a drive.  We needed groceries, so took a scenic drive up Hwy 98 to Crawfordville.  We stocked up at the local Walmart and then take a visit to the nearby Bald Point State Park. Why is it only fun to go to Walmart when you are traveling?  This is a special quiet place to spend the day on the beach.  It has a nice public beach area with facilities and was totally vacant while we were there.  It was a little too chilly to spend time here today.  I hope we get a chance to return on a warmer day.

March 12, 2013 MOMMY IS PREGGERS!




It's another cool day in Florida, unseasonably cool.  We tried to get some sun but decided to take a stroll on the beach.  Dave's cell phone alerts him that he has a text message.  He looked confused when he looked at it and asked me to take a look.  "Is Audrey pregnant?"  Oh my goodness...what an awesome surprise.  Her youngest son Sam is holding this sign saying that he is going to be a big brother & that mommy is preggers.  What a great way to end a walk on the beach.......  Oh yeah.  The sign was written by my 17 year old granddaughter, Brilynn.  Preggers?  Too cute.  We are very excited for them and for us, too!

March 11, 2013 BEACH PIT & SURF FISHING



After a nice day on the beach surf fishing, we headed for The Beach Pit - EastpointWhat a pleasant surprise!  We had spent the day driving around St. George's Island and needed a good place to eat.  After passing up several restaurants, we came upon this one in Eastpoint.  

It sits right on the bay and recently opened for business.  They have another location on St. George's island which we passed up.  I'm glad there was another one on our way home.  The food and service is excellent!  The staff is so friendly and they went out of their way to make us feel at home.  The atmosphere was very nice and has a nice screened in porch area for warmer weather dining.  

The entire Apalachicola bay area is famous for their oysters.  They still harvest the oysters the old fashioned way with tongs from small boats.  The oysters have a less salty taste compared to oysters harvested in other areas.    This Apalachicola Oyster Guide will tell you all you want to know about oysters in this area.  

Dave mentioned that we have never tried a raw oyster before, so they brought us both one to try.  I had no choice but to try it, too.  You know what?  It was actually pretty good!  I think the crackers, horseradish and cocktail sauce helped.  They have oysters during happy hour 4-6PM for $5.00 dozen.  We plan to come back and try them again....probably, steamed next time though.  :-)

I ordered the Pork BBQ plate which came with good portions of home-made coleslaw and baked beans.  It was excellent!  Dave tried the smoked mullet and was not a fan.  He has never tried it before and didn't like the mushy texture.  So far, this is our favorite restaurant in the Apalachicola area.

March 10, 2013 CARRABELLE FISHING DOCKS





Today, we discovered a great place to fish in the town of Carrabelle at their city park.  They have a great fishing dock located on the bay.  Dave was able to get a lot of fishing tips from the locals.  He caught small fish which he then used for bait fish.  

The pelicans are very aggressive though and only goal is to get your bait off your line.  Dave finally caught one with his hook.  He broke away but not sure if he still has a hook in his mouth.  There are so many options in Carrabelle for fishing besides the ocean with the bay and rivers nearby.  This truly is a great place to visit and take up fishing. Next year, if we return...I will also have a fishing pole.  I'll let Dave learn all the tricks first.  :-)

March 9, 2013 CAMP GORDON JOHNSTON DAYS PARADE

Our goal while traveling is  to spend  time in small towns and get to know the people who live there. We really enjoyed attending the Camp Gordon Johnston Days parade in Carrabelle, Florida.  This yearly event and parade honors WWII veterans who practiced here to prepare for the battle of Normandy.  It was an honor to pay tribute to these brave soldiers and to be part of this special event. 

It makes me think of all the times we missed out on parades and special events, because we did not take the time out of our busy lives to go. I think this has been good for us to take a break out of our normal routine and reflect on what is important to us - God, our relationship, family, friends and our country.    This RV adventure is truly a blessing to us.  We are enjoying some fun, quality time together and will be better for it when we return home to our friends and family.  I wish everyone could take this much time out of their day to day lives to reflect on what is important to them and eliminate the stress in their lives.




We crossed the large bridge and went to St. George's Island.  We wanted to take a look at the State Park Campground.  It was nice but a good walk to the beach.  Plus, there wasn't a whole lot to do on the Island.  It is a busy park though and is booked up way in advance.  

We wanted to have a fish supper somewhere on St. George's Island but finally ended up at the recently opened The Beach Pit in Eastpoint.  What a nice surprise!  It's located right on the bay and our hostess and server were so friendly.  They even brought us each a raw oyster to try for our first time.  We put it on a cracker and added cocktail sauce and horseradish.  I can't say we loved it but we didn't dislike it either.  All I could really taste was the cocktail sauce, horseradish and cracker.  We are proud of ourselves for trying it and will definitely come back to try more.  

I ended up ordering the pork BBQ plate which was excellent!  It include good size side portions of coleslaw and baked beans.  The beans were awesome!  Dave ordered the smoked mullet.  He wasn't that crazy about it as the texture was mushy.  We will definitely come back and try the Happy Hour Oysters for $5.00 per dozen.  It is a great location and nice porch for dining outside right on the bay.  We highly recommend this restaurant.

March 8, 2013 THINGS TO TELL ABOUT CARRABELLE


 It was only about a 3 hour drive traveling down Hwy 98 to get to the little fishing community of Carrabelle.  We are staying at the Carrabelle RV Resort right on Hwy 98 across from the ocean/bay.  Mind you, we wanted to head further south into Florida but everything was booked.  We were fortunate enough to get an over-flow site at the Carrabelle RV Resort.  Again, we are newbies.  We should have questioned the word over-flow when booking for an entire month.  But what choice did we have?  We have 6 weeks to travel and everything close to the ocean is already booked.   

This place is booked solid, lots of "snow birds" from the North this time of year.  Most folks are staying a month or longer.  We check in and proceed to back our 40 ft. 5th wheel into our spot #6.  It is a short little paved pad with a secondary pad attached next to it for parking.  This space is also wedged between 2 long narrow rental cabins.  Too make matters worse, there is a car parked on our parking pad.  I am proud of Dave for even attempting to back into that small tight space.  It is even more surprising that he didn't crunch the back end of the Big Horn 5th Wheel parked directly across from us.  A nice man helped us try to back into our tight space.  He finally suggested to Justin, who works at the park to please move us, as we could never fit into that space.  

They were able to switch  us to overflow site #10.  It was easier to park here since backing up was a straight shot from the road.  Both of these sites are really for rigs up to 32'.  The girl that took our reservations only works part-time and truly didn't know better.  If anyone else had taken our reservation, we would not be fortunate enough to be here.  This is a gem of an RV resort.  So, we are thankful.  

If a better site comes open, they will move us.  Since we are booked from 3/15 to 4/15, it will be doubtful.  Most people will book for the entire month.  Lesson learned.  From now on, we need to make our reservations early and RUN...when someone mentions over-flow site.  For now, we are making the best of this situation and going to enjoy our month here exploring and learning more about the Carrabelle area.  The following are pictures of our site - view the rear, side and looking towards the front.

Once we settled in, we were eager to get to the beach and watch Dave catch some big fish.  Brrr.....it's still unseasonably cold for March in Florida.  We are having fun but really would like to have some warmer temps.  The breeze off the ocean is very crisp and not very good for fishing either.  Dave wasn't the only one not catching fish.  We are hearing that this just isn't a good time for fishing in Carrabelle.   Oh well.....we'll just go out to dinner.  We heard The Fisherman's Wife has great seafood, so we headed there.  

The Fisherman's Wife is located in downtown Carrabelle.  It was a little hard to spot at first but right on the main road.  It's a blue & white house with a few parking spots in front.  Inside, it is nice and cozy. The server was polite but not very personable.  Our meal came quickly and was very good.  We shared our meals.   I had the fried shrimp and Dave fried grouper.  The menu is small and everything is fried with coleslaw, hush puppies and fries.  I loved that I could actually taste the flavor of my shrimp.  Shrimp I have at home has no flavor.  The only thing you taste is the cocktail sauce!  This was very good.  Although, we enjoyed our meal, I doubt we will come back again this year.  We really prefer to have our fish grilled or pan seared.  If you like fried fish, I really  recommend that you visit this popular diner in Carrabelle.
